Taffy Apple Salad
Taffy Apple Salad is an moderately easy dinner. Made with 4 c. chopped red delicious apples, unpeeled, 1 (8 oz.) can crushed pineapple, drained (reserve juice), 1 c. salted peanuts, 1/2 c. sugar and 1 tbsp. cider vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place apples, drained pineapple and nuts in bowl; mix. Combine cornstarch, sugar, vinegar and reserved pineapple juice. Cook over low heat for 1 minute, then add beaten egg.
Cook until thick.
When cool, stir in apple mixture and mix well. Fold in Cool Whip.
Refrigerate 6 hours or overnight.
