Sweet Potato Soufflé
Sweet Potato Soufflé is an moderately easy dinner. Made with 4 large sweet potatoes, 1 small can crushed pineapple, 1/2 c. brown sugar, firmly packed, 1/2 c. white sugar and 1/2 c. creamy peanut butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook sweet potatoes in skins; peel and mash.
Stir in both quantities of sugar, salt and water.
Add peanut butter, mixing thoroughly.
Place half of this mixture in baking dish and cover with crushed pineapple.
Add remaining potato mixture and bake 45 minutes at 350°.
Top with marshmallows for last 5 minutes of baking, if desired.
