Sweet Potato Soufflé
Sweet Potato Soufflé is an easy dinner. Made with 2 lb. sweet potatoes, 1 stick margarine, 1 1/2 c. sugar, 1 large can crushed pineapple and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Boil sweet potatoes (in the skins) until soft.
Peel as soon as you can handle them.
Mix in egg yolks, margarine, pineapple and sugar.
(Save egg whites for meringue.)
Place in 1 1/2-quart baking dish.
