Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 2 1/2 lb. sweet potatoes, 1/4 c. butter, melted, 1/4 tsp. cinnamon, 1/2 c. light brown sugar and 1/2 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In saucepan, boil potatoes in jackets until tender. Drain, peel and mash.
Measure out 4 cups sweet potatoes in large mixing bowl and blend in sugar, butter and spices.
Stir in egg mixture until thoroughly blended.
Pour in unbaked pie shell. Bake on lowest rack in a 325Β° oven for 40 minutes or until light brown.
