Sweet Potato Muffins
Sweet Potato Muffins is an moderately easy dinner. Made with 1/2 c. butter, 1 1/4 c. sugar, 2 eggs, 1 1/4 c. mashed sweet potatoes and 1 1/2 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cream the butter and sugar together.
Add eggs and mix well. Stir in sweet potatoes.
Sift the flour, baking powder, salt, cinnamon and nutmeg together.
Add alternately with milk.
Do not overmix.
Fold in pecans and raisins.
Grease 1 1/2-inch muffin tin and fill 2/3 full of batter.
Bake at 400Β° for 25 minutes. Makes 5 dozen.
