Sweet Potato Croquettes
Sweet Potato Croquettes is an easy dinner. Made with 2 c. steamed sweet potatoes, 1 doz. small marshmallows, 1 c. corn flake crumbs, 2 c. sugar and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Steam potatoes.
Mash and mix with sugar, dash of salt and 1 teaspoon vanilla.
Place corn flake crumbs in small bowl.
Heap 1 tablespoon of potato mixture into spoon.
Put 1 marshmallow into center of potatoes.
Roll in corn flake crumbs, forming a ball. Deep fry until golden brown.
Serves 12.
