Sweet Potato Cake
Sweet Potato Cake is an moderately easy dinner. Made with 1 1/2 c. cooking oil, 2 c. sugar, 4 eggs, separated, 4 tbsp. hot water and 2 1/2 c. sifted cake flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine oil and sugar; beat until smooth.
Add egg yolks and beat well.
Add hot water, then dry ingredients, which have been sifted together.
Stir in potatoes, nuts and vanilla; beat well. Beat egg whites until stiff and fold in mixture.
Bake in 3 greased 8-inch layer pans at 350Β° for 25 to 30 minutes.
Cool and frost.
