Sweet Potato Boats is an easy dinner. Made with 5 large sweet potatoes, baked, 1/3 c. brown sugar, 4 tbsp. peanut butter and 12 c. peanuts, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Let potatoes cool after baking; cut in half (lengthwise). Scoop out inside, saving the peelings.
Mash potato, brown sugar and peanut butter together.
Put back into peelings.
Sprinkle with chopped peanuts.
Put into oven at 450Β° and brown slightly.
