Sweet Potato Banana Custards
Sweet Potato Banana Custards is an moderately easy dinner. Made with 2 c. mashed, cooked sweet potatoes (3 to 4 medium), 2/3 c. mashed, ripe bananas, 12 oz. can evaporated skim milk, 2 beaten eggs and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Combine sweet potatoes and bananas.
Add milk and mix well. Add brown sugar, eggs and salt.
Mix well.
Spray 8 (1/2 cup) custard cups.
Arrange cups on baking sheet.
Combine sugar and cinnamon.
Sprinkle on top of mixture in each cup.
Bake in 325Β° oven for about 35 minutes or until a knife inserted comes out clean.
Serve warm.
