Supper Salad
Supper Salad is an moderately easy dinner. Made with 1/2 c. mayonnaise, 1 tsp. salt, dash of pepper, 1 tsp. grated onion (optional) and 1 c. cooked chicken or other meat, cut in strips, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Prepare rice as directed.
Mix together the salt, mayonnaise and pepper.
If you like, add 1 teaspoon grated onion to this mixture.
Add chicken, Swiss cheese, pickle and hot rice.
It is important that the rice be hot.
Add peas; mix gently.
Cover and chill about 1 hour, or for a very different flavor, serve at room temperature.
Serve on salad greens garnished with tomatoes and olive wedges.
Serves 6 to 7.
