Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 c. summer squash, 1/4 c. chopped onion, 1 can cream of mushroom soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook sliced squash and onion.
Drain.
Combine soup and sour cream.
Stir in carrots; add drained squash and onions.
Combine stuffing mix and butter.
Spread 1/2 the stuffing mixture in bottom of casserole dish.
Spoon vegetable mixture over the top. Sprinkle remaining stuffing over the top of the vegetables mixture.
Bake at 350Β° for 25 to 30 minutes or until heated through.
