Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 7 c. thinly sliced squash, 1/2 c. chopped onion, 1 can cream of chicken soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook squash and onion in boiling salted water for 5 minutes; drain.
Combine soup, sour cream and carrots with squash and onion mixture.
Melt butter.
Stir in stuffing mix.
Put 1/2 stuffing mix on bottom of dish, then all of vegetable mixture.
Top with remaining stuffing mix.
Bake at 350Β° for 25 minutes.
