Summer Pasta
Summer Pasta is an moderately easy dinner. Made with 1 pt. cherry tomatoes, cut in half, 3/4 c. olive oil (preferably extra virgin), 1/2 c. parmesan cheese, freshly grated, 10 oz. mozzarella cheese, cubed and 1/2 c. romano cheese, freshly grated, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Saute garlic in olive oil over low heat, but don't let it brown.
Add tomatoes.
Cook, stirring frequently.
Meanwhile, cook pasta al dente; drain.
Mix pasta, tomato mixture, Romano cheese, Parmesan cheese and Mozzarella cheese, mixing well.
Add basil and serve immediately.
Serves 4 to 6.
