Summer Chili
Summer Chili is an moderately easy dinner. Made with 2 tbsp. olive oil, 1 or 2 skinless, boneless chicken breasts, 2 small zucchini, 1 large onion and 1 clove garlic, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cut chicken into bite size pieces; brown in olive oil.
Slice zucchini and chop onion and garlic and add to chicken.
Cook 3 to 5 minutes and add kidney beans, tomatoes and seasonings and cook 30 minutes.
You may add any summer vegetables you like.
I like to triple the recipe and freeze part of it.
