Cut beef into small slices.

Brown on both sides in large skillet.

Pepper meat, but do not salt.

After browning, move beef to one side of skillet.

Into skillet, add onions and celery. Sprinkle with 2 teaspoons sugar.

Add bouillon and soy sauce.

Add mushrooms and bamboo shoots; cook for 20 minutes, or until onions are tender.

Add celery leaves and scallions; cook another 5 minutes, until leaves and scallions are wilted.

Serve with rice.
