Sugarless Strawberry Jam
Sugarless Strawberry Jam is an easy dinner. Made with 1 c. cleaned crushed strawberries (approximately 1 lb. or 2 1/2 c. whole berries), 3/4 c. sugar-free strawberry soda, 2 pkg. sugar substitute and 3 oz. pkg. wild strawberry sugar-free gelatin (dry), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine crushed fruit and strawberry soda in a 2-quart microwave bowl.
Microwave for 3 to 4 minutes at High (100%) or until mixture comes to a boil and boil for 1 minute.
Stir in sugar substitute and gelatin.
Blend until gelatin is dissolved.
Pour into sterilized jars.
Cover lightly and let stand at room temperature to cool.
Cover tightly and store in refrigerator for up to 2 weeks.
Makes 1 1/4 cups.
