Succotash
Succotash is an moderately easy dinner. Made with 4 slices bacon, 6 medium potatoes, peeled and diced, 1 small onion, minced, 10 oz. pkg. frozen baby lima beans and 10 oz. pkg. frozen corn, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In Dutch oven over medium heat, cook bacon until browned. Remove and crumble. Set aside.
In drippings, over medium heat, cook potatoes and onion until onion is tender, stirring often. Add remaining ingredients and heat to boiling.
Reduce heat, cover and simmer 20 minutes.
Stir occasionally until potatoes are tender and mixture thickens.
Serve, sprinkled with bacon.
