Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 3 medium zucchini, 1 lb. ground beef, 1 small onion, chopped, 1 c. cooked rice and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Half the zucchini lengthwise.
Scoop out zucchini halves leaving 1/4-inch shell.
Rinse and drain.
Cook and stir ground beef and onion in a 10-inch skillet until beef is light brown. Drain.
Stir in rice, salt, garlic salt, chili powder and 1 cup of tomato sauce.
Heat through.
Stuff each zucchini half with beef mixture.
Place in an ungreased baking pan.
Pour remaining tomato sauce over the zucchini.
Cover and bake in a 350Β° oven for 45 minutes.
Uncover.
Bake 15 minutes longer.
