Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1 medium zucchini per 2 people, 1 small can corn per 1 zucchini, 1/2 c. soft bread crumbs, 1/4 c. minced onion and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut zucchini in half lengthwise and seed.
Mix corn, bread crumbs, onion, salt, pepper, and pimentos and stuff zucchini halves, dot with butter.
Place in baking pan with 2 tablespoons water, tent, and bake at 350Β° for 45 minutes.
