Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1 zucchini, 1 tsp. parsley, 1 onion, chopped, 1 lb. ground beef and 1 c. bread crumbs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cut zucchini in half.
Scoop out the zucchini and leave the shell. Cook zucchini, oil, parsley and onion.
Let cool.
Brown ground beef and let cool.
Mix both with bread crumbs and eggs. Fill shells.
You can put a can of Italian stewed tomatoes over all.
Bake at 350Β° for 45 minutes to 1 hour.
Very good with a serving of rice.
