Stuffed Summer Squash
Stuffed Summer Squash is an easy dinner. Made with 3 summer squash, 1/4 c. bulk sausage, 1/4 c. mashed potatoes and 1/4 c. cracker crumbs, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut squash in halves lengthwise.
Cook for 2 minutes in boiling salted water.
Drain them dry and remove the centers. Place them on a shallow buttered dish; fill with mixture of half sausage-meat and half mashed potatoes.
Sprinkle cracker crumbs over the top; dot with butter.
Bake for 30 minutes in a 350Β° oven.
Makes 2 servings.
