Stuffed "Ponce"
Stuffed "Ponce" is an moderately easy dinner. Made with 1 small hog ponce, 3 lb. ground pork, 1 large bell pepper, chopped, 1 large onion head, chopped and 2 pods garlic, minced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Clean ponce well.
(Use pliers to remove inner film.)
Put raw ground pork and other ingredients into bowl.
Work well with hands until well mixed.
Add seasoning.
Stuff mixture into ponce.
Sew it up.
Place in a thick pot with enough oil to keep from sticking and cook over low heat.
Add a little water from time to time and be careful not to break skin while handling.
Cook, covered, for about 2 hours.
