Stuffed New Potatoes
Stuffed New Potatoes is an moderately easy dinner. Made with 20 new potatoes, small ones about silver dollar size, 3/4 c. cheddar cheese, grated, 1 c. cream cheese, 1/2 c. sour cream and 3 tbsp. freshly chopped chives, this recipe delivers authentic, satisfying flavors. Boil potatoes on a medium heat till soft and cool in fridge . Combine the rest of the ingredients together.
Cut cooled potatoes in half.
With a melon scoop or a small spoon scoop out a bit of potato and discard.
Spoon some of the mixture into the potato, about a Tbsp.
Bake 375Β° 15-20 minutes.
Serve immediately.
If any of the mixture left save in the fridge.
It works great on top of a baked potato!
