Stuffed Green Peppers
Stuffed Green Peppers is an moderately easy dinner. Made with 6 large green peppers, 1 onion, chopped, 3 tomatoes, peeled and chopped, 1 c. cooked rice and 1 lb. ground turkey or lean ground beef, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cut the tops off the green peppers; remove seeds.
Cook peppers in boiling water for 3 to 4 minutes; drain.
Coat a nonstick skillet with vegetable oil spray.
Cook turkey and onion until turkey is done and onion is soft.
Add tomatoes.
Simmer for 10 minutes.
Stir in remaining ingredients except bread crumbs. Stuff peppers with turkey mixture.
(These can be frozen at this point.)
To bake, place in a shallow baking dish.
Top with bread crumbs.
Bake at 350Β° for 20 to 25 minutes.
