Stuffed Cherry Peppers
Stuffed Cherry Peppers is an moderately easy dinner. Made with 1 large jar cherry peppers, 1/2 lb. thinly sliced provolone cheese, 1/2 lb. thinly sliced prosciutto, 1/2 c. olive oil and 1/2 tsp. oregano, this recipe delivers authentic, satisfying flavors. Drain peppers; set brine aside.
Cut off tops and scoop seeds out of peppers.
Roll slices of cheese and Prosciutto and slice into 1-inch pieces.
Stuff into peppers spiral side up.
Place in deep sided dish.
Mix olive oil, brine, oregano, salt and pepper and drizzle over peppers.
