Heat peanut oil in fryer to 365Β°.
Place in large bowl 2 c. flour, 1/8 tsp. salt.
Make well in center of flour.
Add three eggs, one at a time, mixing after each addition.
Add vanilla - mix well to make a soft dough.
If necessary, add 1 - 2 tablespoons water.
