Strawberry Icebox Cake
Strawberry Icebox Cake is an moderately easy dinner. Made with 1 lb. vanilla wafers, crushed, 1/4 c. butter or margarine, 1 1/2 c. confectioners sugar, 2 eggs and 1 qt. fresh or frozen strawberries, sweetened, this recipe delivers authentic, satisfying flavors. Line bottom of 8 x 11-inch pan with more than half of the wafer crumbs.
Cream butter and sugar.
Add the eggs, 1 at a time, beating well after each addition.
Spread over crumbs.
Crush and sweeten berries and spread next.
Top with whipped topping, then with remaining crumbs.
Chill overnight.
