Strawberry Fruit Spread

Soften gelatin in 1/4 cup water; set aside.
Combine remaining ingredients in a medium saucepan.
Bring to a boil; reduce heat and simmer uncovered for 8 minutes, stirring frequently.
Remove from heat and add gelatin mixture, stirring until gelatin is dissolved.
Cool to room temperature.
Pour strawberry mixture into sterilized glass jars; cover tightly.
Refrigerate at least 4 to 6 hours or until mixture is thoroughly chilled.
Store in refrigerator for up to 1 month.
Yield:
3 half pints (about 7 calories per tablespoon).
