Strawberry Charlotte
Strawberry Charlotte is an moderately easy dinner. Made with 2 envelopes plain gelatin (knox), 3/4 c. sugar, divided, 4 eggs, separated, 2 tbsp. lemon juice and lemon rind (optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Put the gelatin, 1/4 cup of the sugar and salt in the top of a double boiler.
(Add the following mixture to the double boiler, mix in a separate bowl.)
Beat egg yolks slightly and add water and 1 box of the strawberries.
Put over boiling water and cook, stirring constantly, until the gelatin is dissolved and the strawberries are melted.
