Strawberry Charlotte Russe
Strawberry Charlotte Russe is an moderately easy dinner. Made with 2 (3 oz.) pkg. strawberry-flavored gelatin, 2 c. boiling water, 1 1/2 c. crushed strawberries (fresh or frozen), 1 tbsp. lemon juice and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Put gelatin in a large bowl; add boiling water and stir until dissolved.
Combine strawberries, lemon juice, sugar and salt; stir until sugar is dissolved.
Combine with gelatin mixture. Chill to consistency of beaten egg whites.
Fold in whipped cream. Line side of spring-form pan with ladyfingers.
Carefully spoon mixture into pan and chill for 4 to 5 hours.
Decorate top with additional strawberries and whipped cream, if desired.
