Strawberry-Amaretto Trifle
Strawberry-Amaretto Trifle is an easy dinner. Made with 1/3 c. sugar, 3 tbsp. minute tapioca, 1 egg, slightly beaten, 2 1/2 c. skim milk and 1/4 c. amaretto (may use almond extract), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

A day ahead, make tapioca pudding as follows
Combine all pudding ingredients in saucepan.
Let stand 5 minutes.
Cook and stir over medium heat until mixture comes to a full boil (pudding thickens as it cools).
Remove from heat.
Put in refrigerator bowl and lay a piece of Saran Wrap on the pudding.
Refrigerate overnight!
