Stewed Hard Crabs
Stewed Hard Crabs is an moderately easy dinner. Made with 2 doz. hard crabs, backed and cleaned, 6 to 8 medium white potatoes, diced or cubed, 1 large onion, diced, salt and pepper to taste and 6 to 8 thin slices salt fatback, fried out, or 2 tbsp. oil, if desired, this recipe delivers authentic, satisfying flavors. Place crabs in a large pot.
Add potatoes, onion, salt and pepper, grease from fatback or oil and water.
Cook over medium heat for approximately 15 minutes or until full boil begins.
