Squash Supreme Casserole
Squash Supreme Casserole is an moderately easy dinner. Made with 3 lb. fresh yellow squash, sliced, 1 carrot, grated, 1 c. sour cream, 1 small can chopped green chilies (hot) and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook squash and onion in salted water.
Drain well and mash. Add grated carrot, soup, sour cream and green chilies.
Mix stuffing and melted butter.
Line bottom of 9 x 13-inch casserole with half of buttered stuffing.
Pour in squash mixture.
Top with other half of buttered stuffing.
Bake at 325Β° for 50 to 60 minutes, uncovered.
