Squash Quiche Canoes
Squash Quiche Canoes is an moderately easy dinner. Made with 6 slices bacon, 6 yellow squash, 1/2 c. heavy cream, 1/2 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook bacon until crisp.
Drain on paper towels and then crumble.
Reserve 2 tablespoons bacon fat.
Hollow out squash.
If using large squash, half lengthwise first.
Discard seeds and pith; chop remaining portion and saute in bacon fat for 5 minutes. Preheat oven to 350Β°.
Blend beaten eggs with heavy cream.
Add cheese, salt, pepper, nutmeg, crumbled bacon and sauteed chopped squash.
