Squash Pie
Squash Pie is an moderately easy dinner. Made with 1 small butternut squash, 2 1/4 c. sugar (1/2 white and 1/2 brown), 1 1/2 sticks butter, 1 tsp. nutmeg and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel squash, remove seeds, cut in pieces.
Boil in salt water, add butter and sugar until soft. Beat in mixer well, remove beater and rinse under water to wash out any strings. Add butter and sugar, beat again until light.
Add eggs, one at a time, then nutmeg, cinnamon, orange peel, vanilla and lemon extract.
Bake in crust at 350Β° until brown. (Bake on cookie sheet if preferred.) Add 1 small box raisins for variety.
