Squash Pie
Squash Pie is an moderately easy dinner. Made with 2 c. squash, steamed and strained, 2 c. rich milk or cream (may use canned milk), 1 c. brown or granulated sugar, 2 eggs, beaten and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix squash with all ingredients, except milk; beat until mixed, then add milk.
Beat 2 minutes.
Pour into pie plate which has been lined with pastry.
Place into hot oven for 15 minutes, then reduce heat and bake 30 minutes in a 350Β° oven.
This makes 1 large or 2 small pies.
