Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 to 3 lb. yellow squash, 1 medium onion, chopped small, 2 eggs, 1 tsp. salt and 8 oz. muenster cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Chop squash in 1-inch pieces (or less).
In large skillet, melt oleo and saute onion and squash.
Beat eggs.
Chop cheese into small cubes (1/2-inch).
Place squash and onion in casserole dish; mix in egg and cheese cubes.
Bake 45 minutes at 350Β° until brown on top.
