Squash Casserole
Squash Casserole is an moderately easy dinner you can prepare in about 1 hour 18 minutes. Made with or 6 small or medium squash, (8 oz.) pkg. mild cheddar cheese, eggs, or 2 small onions (optional) and packs ritz crackers, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook squash and onions on top of stove until tender.
In a mixing bowl, stir milk, margarine and eggs until well mixed.
In a large casserole dish, put one layer of drained squash and onions on bottom.
Shake one pack of crackers on top of squash; shake 1 pack of cheese on top of crackers.
Then pour half of liquid mixture on top of cheese.
Repeat one more layer the same way.
Cook in oven for 30 minutes or until brown.
Serves 8 or 9.
