Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. summer squash, 1 can cream of chicken or mushroom soup, 1 c. sour cream, 1/2 c. grated carrots and 2 large white onions, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook squash and onions together until soft.
Drain well and mash.
Add carrots, soup and sour cream.
Soften stuffing with butter and add to squash mixture.
