Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 1/2 lb. yellow squash, 1 large carrot, grated, 2 tsp. pimento, 1 c. cream of chicken soup and 1/2 pt. sour cream, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Preheat oven to 375Β°.
Boil, drain and cool squash.
Mix in carrot, pimento and sour cream.
Add salt and pepper to taste. Melt margarine and mix with stuffing mix.
Place 1/2 of mixture on bottom of 2-quart casserole.
Add squash mixture, top with rest of stuffing.
Bake 30 minutes.
Serves 8.
