Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash (yellow and zucchini), 1/4 c. chopped onion, 1 can golden mushroom soup, 1 c. sour cream and 1 c. grated carrot, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place cut squash onion in water to cover and boil for 5 minutes.
Drain well.
Combine soup, sour cream and carrots. Mix squash and onions.
Mix well.
Melt margarine and croutons or stuffing.
Put 1/2 of the croutons in bottom of square casserole dish.
Pour in squash mixture.
Put remaining croutons on top.
Bake for 30 minutes at 350Β°.
