Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, 1 c. sour cream, 4 grated carrots, 1 (2 oz.) jar pimentos and 1 medium onion, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook squash.
Drain and season with salt and pepper.
Mix with 1/2 stuffing.
Add sour cream, pimentos, onion and soup.
Mix other half stuffing with half cup melted butter.
Line casserole with half stuffing; pour squash mixture into casserole.
Top with rest of stuffing. Bake at 350Β° for 45 to 60 minutes.
