Squash Casserole

Made with qt. sliced squash (cooked & drained), c. medium cheddar cheese, c. minced onions, c. crushed crackers (ritz) and eggs, beaten, this recipe delivers authentic, satisfying flavors. Put squash in large casserole dish & mash.
Add cheese leaving enough to cover later.
Stir in crackers & minced onions. Add eggs & stir quickly to prevent them from cooking.
Salt & pepper to taste.
Cover with rest of cheddar cheese.
Cook at 350 degrees for 20 minutes.
Uncover and cook an additional 20 minutes or until slightly brown.
