Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, cooked, 3 tbsp. onions, chopped, 1 c. grated cheese, 1 c. saltine crackers, crushed and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mash squash up.
Add eggs, 1/2 cup crackers, 1/4 cup butter, milk, onions, cheese, salt and pepper.
Mix well.
Pour into casserole and top with 1/4 cup melted butter.
Sprinkle 1/2 cup crackers on top.
Bake at 350Β° for 1 hour or until brown around edges.
You may garnish with cheese, if desired.
