Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 1/2 lb. yellow squash, 4 medium grated carrots, 2 medium onions, chopped, 1 can cream of chicken soup and 1 small can pimentos, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Boil squash until tender; salt to taste and mash.
Mix carrots, onions, soup, pimentos, sour cream and margarine to cooked squash.
Add 1/2 package of stuffing mix.
Pour into greased baking dish and top with remaining poultry stuffing.
Bake at 350Β° for 30 to 45 minutes.
Can be divided into 2 casserole dishes.
Freezes well!
