Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 c. squash, 1 large onion, 1 pkg. ritz crackers, crumbled, 1/4 c. melted margarine and 1 c. grated cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook squash and onion together until tender; drain off liquid and mash.
Beat together eggs and milk; add to squash.
Mix cheese, margarine and cracker crumbs.
Add 1/2 of this to squash mixture; pour into buttered casserole dish.
Sprinkle remaining crumb mixture on top.
Bake for 20 to 30 minutes at 400Β°.
Serves 6 to 8.
