Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 3 c. squash, drained, 1/2 c. celery, 1/2 c. onions, 1/2 c. bell pepper, chopped and 3 tbsp. weight watchers margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix together in blender the cottage cheese and yogurt.
Boil squash until tender; drain and set aside.
Saute celery, onions and green pepper until tender.
Mix with squash.
Add crackers, yogurt mixture, cheese and seasonings.
Stir to mix.
Bake in a casserole dish at 350Β° for 50 minutes.
Should be brown on top. Makes 6 servings.
