Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 medium yellow squash, cut into 1/2-inch circles, 1 1/2 c. bread crumbs, divided, 1 c. grated cheddar cheese, divided, 1 tsp. salt and pepper to taste and 1 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat squash in heavy skillet, adding water only if absolutely necessary.
Boil 5 minutes or until squash is tender.
Drain and mash squash thoroughly.
Add 1 cup bread crumbs, 1/2 cup cheese, salt, pepper, milk and eggs.
Pour into a buttered casserole dish. Bake at 350Β° for 30 minutes.
Combine remaining bread crumbs and cheese and sprinkle on top.
Bake additional 10 minutes.
