Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 1/2 lb. yellow squash or 2 (no. 2) cans, 1 small jar pimiento (optional), 1 large onion, chopped, 1 pkg. cornbread dressing mix and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook fresh squash; drain and mash.
Add the rest of the ingredients, reserving half of the dressing mix.
Line a casserole dish with reserved dressing which has been mixed with 1/4 pounds margarine, saving some to sprinkle on top of finished dish.
Fill with squash mixture and cover with remaining dressing mix.
Bake at 350Β° for 30 to 40 minutes.
