Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced, 1/4 c. onion, 1 c. carrots, shredded, 1 c. sour cream and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook squash and onion in salted water for 5 minutes.
Drain. Combine chicken soup and sour cream.
Stir in carrots and add drained squash and onions.
Combine stuffing mix with butter (save a small amount of stuffing mix to sprinkle on top and spread on bottom of baking dish.
Spoon vegetable mixture on top.
Bake at 350Β° for 30 minutes.
